Blueberry Fluff

Dessert around our house is rare.  Connie will on occasion request a pie.  Oh, you know what, it's almost time to make his favorite pie - pear/cheddar.  I love it too and it's so easy to make.  I do one every fall.  But, let's talk about most of the time.  I don't have the time or inclination to bake.  My stove is not even and the oven is horrid.  The antique stove in my previous house did a great job.  This one, not so much.  So, there's more incentive to not bake.  Not that I need much incentive to avoid baking!  I can do an open house for 150 and not worry a whit about the food.  Until it comes to the desserts.  Then, it's how easy can they be and how much does a recipe make?  My good friend Trish used to always assign me to make the desserts for group get-togethers.  I finally said, "Look, I'd love to come but only if I can make something other than a dessert!"  I look longingly at all the dessert posts. Then, I delete about 99% of them.  I'm just not going to make any of them so why keep them?  You're probably getting the message here. Baking is not my deal. Creativity with desserts is not my deal.  In the past six weeks, we've had dessert three times.  That's about two times more than normal.  I've blogged about the bread pudding and I'll blog about the blueberry sauce in the future. 

But, this is about the blueberry fluff.  It came about because I had some whipped cream that needed to be used up.  I didn't want to just whip it.  (I know, you're cringing at the pun.)  So, I tossed together the whipped cream and some blueberries then tried to figure out what else might be good...  This is one where you're just going to toss stuff in til it tastes right - that is til you like the results!  Yes, that's a glass of port with it.  Perfect pairing!!

crystallized ginger (we buy ours at Penzey's and it's in little, teeny cubes)



amaretto or whatever liqueur you like - just a little pour to add flavor but not booziness

Simple and easy and would also go well over some kind of pie or cake...lovely!

Sometimes less is more, and this sounds wonderful, and no baking. I'm the opposite of you, I would rather bake than cook:)

We should only make those things that give us pleasure....if not, they will never make a great dessert, or dish....!

Kate, it's a rare thing around here to make desserts too... maybe about once or twice a month and only because someone else in the house has a sweet tooth - thank goodness for bakery treats ... this fluff with the ginger looks inspiring, something I would like, say on a nice stab of warm pound cake....

I just discovered Penzeys this summer...isn't it fab? I especially love their shallot-pepper blend! This dessert looks good. I don't bake a ton either, but I'm trying to make myself do it now and then just to stretch myself.
